SCONES Ingredients
2 cups self- raising flour, sieved
3-4 tablespoons butter or shortening
2 teaspoons sugar
½ teaspoon salt
2/3 cup milkTopping:
1 teaspoon sugar dissolved in (optional)
4 tablespoons milk
Wheat germ or sesame seeds

Stir flour and sugar.

Cut butter into small cubes (½ cm3). Rub with fingertips in flour while raising your hands. Repeat until a coarse meal-like mixture is obtained.

Gradually add milk while working flour and butter until a supple dough is obtained, work for 5 min.

Divide into 16 – 20 small portions or as desired, form into balls. Arrange on a greased baking sheet. Brush the top of each ball with the milk, sprinkle with sesame seed or wheat germ.

Bake in a preheated hot oven (220ºC or 425ºF) for 12 min. or until it is ready. Remove from oven and cover.

Serve with butter, jam or honey.



  • Add 2 tablespoons raisins or sultanas before working the dough in step 3.


  • Add 1/3 cup chopped chives, ¼ cup chopped dill weed, ¼ cup chopped parsley, and ⅓ cup shredded cheese (optional).
  • Add 4 tablespoons of water after step 3. Press the dough into a circle, roll to 2cm thick circle. Use a 5cm dia. cutter to cut the dough (makes 20 scones).
  • Arrange the circles on a greased baking sheet, continue the recipe. Brush with milk, sprinkle with wheat germ or sesame seeds and bake.


  • Combine flour, sugar and butter in the bowl of an electric mixer.
  • Using the bread mixer, mix the ingredients for a few min.
  • Gradually add the milk while mixing. Use a spatula to scrap the sides and bottom of the bowl while mixing.
  • Work by hand for a few min., then divide and continue the above recipe from step 4.

Note:In the above recipe, self-raising flour can be substituted with 2 cups all-purpose flour, plus 2 teaspoons baking powder, 1 teaspoon baking soda and a generous pinch of salt.
