Untitled-2 1 kg shrimps ( ½ kg cleaned)
2 tablespoons flour with ¼ teaspoon salt
1/3 cup olive oil or vegetable oil
1 cup chopped onion
1 cup chopped spring onion (retain the green stems for garnish)
2 garlic cloves, crushed with a dash of salt
2 cups peeled chopped or processed tomatoes
½ cup water or fresh tomato juice
1/3 cup chopped parsley
1 teaspoon dried oregano
½ teaspoon black pepper powder or to taste a dash of chilli powder (optional)
¼ teaspoon salt or to taste
200 g feta cheese

1.Clean and de-vein the shrimps. Retain tails if desired.
2.Sprinkle with the flour and salt mixture and gently rub, allow to stand for 5 minutes. Rinse with cold water and strain retaining some water, then cover.
3.In a medium pot and on medium heat, heat the oil, stir in the onion until soft and transparent. Add spring onion and garlic, stir for a few min.
4.Add the tomatoes and the tomato juice and half of the parsley and oregano, reserving some for garnishing.
5.Season with salt and pepper to taste. Cover and simmer on low heat for 20 min. or until thick.
6.Pour half of the prepared sauce in an oven dish or individual oven casserole.
7.Arrange the shrimps to cover the surface. Cover with the rest of the sauce.
8.Crumble feta cheese on the surface. Sprinkle with the reserved oregano.
9.Bake in a hot oven for 15 min. or until the cheese melts and turns golden.
10.Slice the spring onion stems into thin circles. Sprinkle with the remaining parsley and spring onion circles. Serve with French bread or plain rice.
