2 ½ cups Basmati rice
2–3 Cardamom pods
1 kg Shrimp (shelled and deveined)
1 large Red onion
2 Garlic cloves
¼ tsp Turmeric powder
¼ cup Fresh coriander (cilantro), chopped
2 tbsp Golden raisins (Kishmish)
2 tbsp Ghee (clarified butter)
Prepare the Rice: First, cook the white rice with the cardamom pods to infuse it with a beautiful aroma.
Prepare the Shrimp: Ensure the shrimp is thoroughly cleaned and washed.
Sauté the Onions: Thinly slice the onion. In a pan, fry the slices in ghee until they reach a deep golden brown.
Cook the Base: Add the shrimp, garlic, shrimp spices (if using), and turmeric powder. Stir-fry until the shrimp is cooked through.
Simmer: Stir in a little coriander and the raisins. Cover the pan and reduce the heat to low. Let it sit until steam builds up and the shrimp becomes tender and flavorful.
Serving: Spread the rice on a serving platter and top it with the shrimp mixture. Garnish with fresh coriander leaves and dill.
